Saranda Fishermen Leave at 3 AM: Why That Matters for You
At 3 AM the harbour in Saranda is not quiet. Boat engines start. Lights go on. The fishermen who supply the city's fish counters are going to work.
This matters as supply chain. The time boats leave determines when they return, which determines when fish reaches the counter, which determines how fresh it is when you buy it.
The morning schedule
- 3:00-4:00 AM — Boats leave harbour, working within 10-30 km of the coast
- 5:00-7:00 AM — Boats return depending on catch
- 6:30-8:00 AM — Fish off-loaded at dock; Ardit and other buyers purchase directly
- 8:00-8:30 AM — Fish cleaned, packed on ice, arranged on counter
- 8:30 AM — Fish Shop Ardit opens. What's on the counter was in the sea last night.
Why this matters for buyers
Fish deteriorates from the moment it leaves the water. Not dramatically — a fish caught this morning is still excellent at lunchtime and good by evening. But each hour matters. A fish caught at 5 AM and on the counter by 8:30 AM is in fundamentally better condition than one caught two days ago and refrigerated since.
Most restaurant fish in Saranda was bought wholesale, not from that morning's boats. That is the gap between a fish shop and a restaurant — not just price, but time.
Best time to visit
Best full selection: 8:30 AM to noon. Specific species may sell out during the day. By 3-4 PM you may find reduced selection but willing prices on what remains. We never carry over fish to the next day.
