Species mix for 4 people
- 2 whole sea bream (400-500g each) — grill whole
- 500g shrimp — pan-fry with garlic and olive oil
- 500g calamari — grill or fry
- 1kg mussels — steam with white wine and garlic
- A handful of anchovies — fry quickly
Cooking sequence
Start with items that take longest: mussels first (they hold warm), then whole fish on the grill (15-20 min), then calamari and shrimp (5 min each), then anchovies last (2 min). Everything arrives at the table at roughly the same time.
